To keep Vista around, you should definitely not tell it to take the whole
disk (unless you have multiple hard drives, with Vista installed on one
drive and Ubuntu on another).
I would recommend you resize your Vista partition from within Vista. Check
here for a walkthrough:

Then boot from the Ubuntu installer and tell it to use the free space. See
if that makes a difference.
Vista comes with a newer version of the NTFS file system that's harder to
resize than older versions, that might be the issue.
